- 2 ½ cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 tsp baking soda
- ½ tsp salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ¾ cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ¾ cup creamy peanut butter
- ¼ cup powdered sugar
Instructions
- Make the peanut butter filling: In a medium bowl, mix the peanut butter and powdered sugar together until smooth. It will be thick like a dough. Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment. Freeze for at least 30 minutes to help them hold their shape during baking.
- Prepare the chocolate cookie dough: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a separate large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy—about 2–3 minutes. Add the eggs one at a time, then mix in the vanilla. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. The dough will be thick and chocolatey.
- Assemble the cookies: Scoop about 2 tablespoons of chocolate dough and flatten it in your hand. Place a frozen peanut butter ball in the center, then wrap the dough around it, sealing it completely. Roll it gently into a smooth ball and place it on a parchment-lined baking sheet.
- Chill and bake: Chill the assembled cookies for at least 20–30 minutes in the fridge to prevent spreading. Meanwhile, preheat your oven to 350°F (175°C). Bake the cookies for 11–13 minutes, or until the edges are set but the centers still look slightly soft. They’ll continue to bake on the tray as they cool.
- Cool and enjoy: Let the cookies cool on the tray for 5–10 minutes before transferring to a wire rack. Serve slightly warm for the ultimate gooey peanut butter experience.
