Description

Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¾ cup creamy peanut butter
  • ¼ cup powdered sugar

Instructions

  1. Make the peanut butter filling: In a medium bowl, mix the peanut butter and powdered sugar together until smooth. It will be thick like a dough. Roll the mixture into 1-inch balls and place them on a baking sheet lined with parchment. Freeze for at least 30 minutes to help them hold their shape during baking.
  2. Prepare the chocolate cookie dough: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. In a separate large bowl, beat the softened butter, brown sugar, and granulated sugar until light and fluffy—about 2–3 minutes. Add the eggs one at a time, then mix in the vanilla. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. The dough will be thick and chocolatey.
  3. Assemble the cookies: Scoop about 2 tablespoons of chocolate dough and flatten it in your hand. Place a frozen peanut butter ball in the center, then wrap the dough around it, sealing it completely. Roll it gently into a smooth ball and place it on a parchment-lined baking sheet.
  4. Chill and bake: Chill the assembled cookies for at least 20–30 minutes in the fridge to prevent spreading. Meanwhile, preheat your oven to 350°F (175°C). Bake the cookies for 11–13 minutes, or until the edges are set but the centers still look slightly soft. They’ll continue to bake on the tray as they cool.
  5. Cool and enjoy: Let the cookies cool on the tray for 5–10 minutes before transferring to a wire rack. Serve slightly warm for the ultimate gooey peanut butter experience.
