Description
A delicious and healthy chocolate protein cake perfect for satisfying your sweet tooth while staying on track.
Ingredients
Scale
- 2 scoops (62g) chocolate protein powder
- 1/2 cup (60g) all-purpose flour
- 2 tbsp (10g) unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup (120g) fat-free Greek yogurt
- 1/4 cup (60ml) unsweetened almond milk
- 1 large egg
- 1/4 cup (48g) zero-calorie sweetener (like Swerve or granulated monk fruit)
- 2–3 crushed Oreo cookies (or similar chocolate sandwich cookies)
Instructions
- Preheat and Prepare: Start by preheating your oven to 350°F (175°C). Lightly spray an 8×8-inch baking dish or small cake pan with nonstick spray, or line with parchment paper for easy removal.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the protein powder, flour, cocoa powder, baking powder, baking soda, and salt. Make sure there are no clumps—especially from the cocoa powder or protein.
- Combine Wet Ingredients: In a separate bowl, combine the Greek yogurt, almond milk, egg, and sweetener. Stir until smooth.
- Bring It Together: Pour the wet ingredients into the dry and mix until just combined. The batter will be thick—don’t overmix. Fold in most of the crushed Oreos, saving a few for topping.
- Bake: Pour the batter into your prepared dish and spread evenly. Sprinkle the remaining crushed Oreos on top. Bake for 18–22 minutes, or until a toothpick inserted comes out mostly clean. The top should be set, and the cake should feel springy to the touch.
- Cool and Enjoy: Let the cake cool in the pan for 10 minutes before slicing. You can enjoy it warm (especially with a spoon of Greek yogurt or sugar-free frosting) or store it for later.
