Ingredients

  • 1/2 cup (60g) all-purpose flour
  • 2 tbsp (10g) unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (120g) fat-free Greek yogurt
  • 1/4 cup (60ml) unsweetened almond milk
  • 1 large egg
  • 1/4 cup (48g) zero-calorie sweetener (like Swerve or granulated monk fruit)
  • 23 crushed Oreo cookies (or similar chocolate sandwich cookies)

Instructions

  1. Preheat and Prepare: Start by preheating your oven to 350°F (175°C). Lightly spray an 8×8-inch baking dish or small cake pan with nonstick spray, or line with parchment paper for easy removal.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the protein powder, flour, cocoa powder, baking powder, baking soda, and salt. Make sure there are no clumps—especially from the cocoa powder or protein.
  3. Combine Wet Ingredients: In a separate bowl, combine the Greek yogurt, almond milk, egg, and sweetener. Stir until smooth.
  4. Bring It Together: Pour the wet ingredients into the dry and mix until just combined. The batter will be thick—don’t overmix. Fold in most of the crushed Oreos, saving a few for topping.
  5. Bake: Pour the batter into your prepared dish and spread evenly. Sprinkle the remaining crushed Oreos on top. Bake for 18–22 minutes, or until a toothpick inserted comes out mostly clean. The top should be set, and the cake should feel springy to the touch.
  6. Cool and Enjoy: Let the cake cool in the pan for 10 minutes before slicing. You can enjoy it warm (especially with a spoon of Greek yogurt or sugar-free frosting) or store it for later.
