Description

This luxurious chocolate coffee loaf cake is perfect for sharing with loved ones.

Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup whole milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 2 tablespoons brewed coffee, cooled
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan to prevent sticking.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, cream the softened butter until light and fluffy. Gradually add the milk, eggs, and vanilla extract, mixing until smooth.
  4. Pour the wet ingredients into the dry mixture. Stir until everything is well combined and forms a silky batter.
  5. Transfer the batter into the prepared loaf pan, spreading it evenly.
  6. Place the loaf pan in the preheated oven and bake for 50 minutes or until a toothpick inserted comes out clean.
  7. Once baked, remove the cake from the oven and let it cool in the pan for about 30 minutes. Then, turn it out onto a wire rack to cool completely.
  8. In a bowl, beat together the softened butter and powdered sugar. Gradually add in the brewed coffee and vanilla extract, mixing until you achieve a smooth, buttery frosting.
  9. Once the chocolate loaf cake is completely cool, spread the coffee frosting generously on top.
  10. Slice into generous pieces and share this luxurious loaf cake with your loved ones.
