- 1 large yellow onion, thinly sliced
- 1 pound ground beef
- Salt and pepper, to taste
- 8 slices rye bread
- 4 tablespoons unsalted butter, softened (for bread)
- 4 slices Swiss cheese
- 4 slices cheddar cheese
Instructions
- Caramelize the onions: In a skillet over medium-low heat, melt 1 tablespoon of butter. Add the sliced onions and cook slowly, stirring occasionally, for 20–25 minutes. The goal is to get them soft, golden, and sweet—without burning. This step adds irresistible depth to your patty melt.
- Form and season the beef patties: Divide the ground beef into four equal portions and shape into oval patties (to match the bread shape). Season both sides with salt and pepper.
- Cook the patties: In the same skillet over medium heat, cook the beef patties for about 3–4 minutes per side until browned and cooked through. Set aside on a plate.
- Assemble the sandwiches: Spread a thin layer of softened butter on one side of each slice of rye bread. On the unbuttered side, layer a slice of cheddar, a beef patty, caramelized onions, a slice of Swiss cheese, then top with another slice of bread (butter side out). Repeat for all sandwiches.
- Grill the patty melts: Heat a clean skillet or griddle over medium heat. Cook each sandwich for about 3–4 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese is fully melted.
- Serve and enjoy: Slice in half and serve hot. The cheesy pull and crisp crust make each bite unforgettable.
