Description

A quick and healthy sautéed vegetable dish perfect as a side or light main course.


Ingredients

  • 1 bunch Asparagus (trimmed and cut into 2-inch pieces)
  • 1 cup Bell Pepper (sliced (any color))
  • 1 cup Carrots (sliced)
  • 1 cup Zucchini (sliced)
  • 2 tablespoons Olive Oil (for sautéing)
  • 1 teaspoon Garlic (minced)
  • 1 teaspoon Salt (to taste)
  • 1/2 teaspoon Black Pepper (to taste)

Instructions

  1. Wash and prepare all vegetables by trimming, slicing, and cutting them as indicated.
  2. Heat olive oil in a skillet over medium heat.
  3. Add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add asparagus, bell pepper, carrots, and zucchini to the skillet.
  5. Sauté the vegetables for 5-7 minutes, stirring occasionally, until they are tender but still crisp.
  6. Season with salt and black pepper to taste.
  7. Remove from heat and serve warm.
